2005 Winning Recipes
The 2005 Cook-Off focused on the passion Americans exhibit for beef and the special
times they share when families enjoy beef dishes together. The $50,000 “Best of
Beef” grand prize winning recipe, Blazin’ Colorado Steaks, used only eight ingredients
and takes just 35 minutes to prepare (not including marinating time).
The 2005 competition continues to be a barometer of food trends. The “Best of Beef”
recipe reflects the trend toward unique, non-traditional flavor pairings using fiery
ingredients such as green chiles and chipotle peppers combined with tangy lime.
Entrants dared to be bold with citrus flavors this year – with blood oranges and
tangerines adding a flavorful zing to many of the dishes. In addition, recipes went
beyond mainstream ethnic flavors with Latin and Mediterranean influences such as
feta cheese, sun-dried tomatoes, chimichurri sauce, Thai sweet chili sauce, red
curry and pomegranate molasses. Smoky flavors also reigned supreme with chipotle
peppers, smoked cheeses, smoked paprika and Mexican slaw pumping up the flavor in
a few recipes.
